Roasted potatoes can have a delicious second life. Try them one of these five ways.

Roasted Potato Hash

Sauté some onions and chiles, then add the roasted potatoes and cook until warm. Top with fried eggs before serving.

Tacos with Roasted Potatoes


Warm the potatoes with some crumbled and cooked Mexican chorizo. Wrap in corn tortillas and top with shredded cabbage, Cotija, and salsa.

Roasted Potato Salad

Bring the roasted potatoes to room temperature and sprinkle them over salad like soft croutons.
